咕咾肉 Sweet and sour pork, called “gu lo yuk”,is originally made with vinegar, preserved plums and hawthorn (山楂) candy for a nearly scarlet (鮮紅色的) color and that sweet-sour flavor.
Cantonese “laap cheung” (臘腸) is a perfectly proportioned (配比) mix of slightly-sweet pork fat and meat. Local people cook them with rice, vegetables, eggs or just about anything.
