0 Safety Notes
Attention! The following safety measures must always be observed while grinding and mounting the cutter head!
Prerequisite for the safe handling and problem-free operation is perfect grinding, balancing and the proper assembly of the cutter head.
All persons who are involved with grinding the cutter and the assembly of the cutter head, must read and observe the following user information carefully. It involves your safety!
When installing and mounting the cutter head, always wear suitable protective gloves made from e.g. a material reinforced with metal fibres.
Keep young people, children and untrained persons away from the machine!
The owner is under obligation to appoint only such persons to grind the cutter and assemble the cutter head, who:
- have been instructed in the handling and who are aware of the fundamental regulations for work safety and accident prevention.
- have read and understood this user information, especially the safety chapter and the warning information.
Operation and maintenance of this cutter mixer are considered dangerous as defined by the Law on Youth Employment Protection (” 22). Do not let unauthorised persons use the cutter mixer.
Storing cutter head and cutter safely
Cutter head and individual cutters must be stored safely and preserved for transport as long as they are not being used.
Intended use
The WMK cutter head is provided for the VCM 550l, VCM 360l vacuum cutter-mixer; CM 360l cutter-mixer from K+G WETTER. All other uses are not allowed.
The WMK cutter head is permitted for a maximum speed of 3600 rpm (VCM 550l) respectively 4000 rpm (VCM / CM 360l). Prerequisite is perfect grinding (chapter 4), adjustment (chapter 2.1) and perfect balancing and assembly according to chapter 2.2 and 3.1.

Depending on the purpose of use, 4 to 8 cutters can be used in 2 to 4 cutter sets in the WMK cutter head.
The WMK cutter head consists of 2-4 cutter sets with two cutters, balancing ring, intermediate discs, end disc, cap nut and safety screw. Depending on the purpose of use, a cutter set with two cutters can be replaced with an intermediate disc with same thickness.
1.2 Cutter sets
A full cutter set consists of the stop disc with two inlaid segments, the balancing disc and two radial opposite cutters, that are screwed onto the fixed segments in the stop disc.
In the cutter set 1, a filler piece and then the second cutter is mounted opposite the first cutter. In the same manner, a filler piece is fastened opposite the second cutter.
1.3 Stop disc
Each stop disc is made of a solid steel core with a central bihexagonal and four taps for fixing the inlaid segment. Two stop bolts used in each of the stop segments serve as stopper for a cutter blade. The cutter blade is screwed to the Einlegesegment.
For easy handling of the cutter sets, the outer ring of the stop disc is made of plastic. There are holes in it for the balance weights and an identification number from 1 to 4 (see Figure 2, Pos. 7) for the cutter sets 1 to 4.
In the balancing disc for cutter set 1, two additional centring bolts are used to fix the fitting position to the balancing ring and the cutter arrangement on the cutter set.

2 Adjusting and balancing the cutter head
2.1 Adjustment
The cutters delivered with the machine are adjusted ex-works
at the best distance to the cutter bowl. The distance is about
1,3 - 1,8 mm.
All cutter knives are of the blade length.
The tips of the knives are not ground when resharpening. The
insert segments are used to properly align the knives with the
cutter bowl (Fig. 2 and 3, pos. 1)
Each insert segment has been fitted with two solid stop bolts.
The distance between the boreholes for the stop bolts is
variable in a radial direction of the knives, so that it is possible
to adjust the knife in relation to the rim of the bowl.
Segments are available from size 1 to 10. One difference in
size number corresponds to a change in distance of 1 mm.
The cutter head is factory set; cutter set 1 is typically fitted with
an insert segment size 10, the other cutters sets are fitted with
an insert segment of size 8 or 9.
If the tip of a knife has been damaged making it necessary to
resharpen it, the edge of the knife can be adjusted in relation to
the rim of the bowl by using smaller sized insert segments.
Segments in sizes 1-10 mm can be reordered from K+G
Wetter.

balancing device (included with the cutter mixer) if they are
dismantled, e.g. for cleaning and grinding. To do this, proceed
as follows:
1. Place the completly cutter set (Figure 2 and 3) on the
adjusting hexagon (Figure 4) of the adjusting device.
Check for a secure fit of the insert segment fixing screws in
respect of the stop disk (Fig. 4).
2. Place cutter on the cutter head disc, stop on the stop bolts
and tighten with the fixing screw (Figure 5).
3. Turn cutter against the adjusting screw (Figure 4).
Attention, the number marking on the balancing disc must
match with the marking on the adjusting screw (see
Figure 4).
4 Check the distance from the adjustment screw to the
foremost cutter tip. The cutter head has been factory set; it
must be easy to turn the tip of the knife past the adjustment
screw.
5. Should this not be the case with a new knife, the knife is too
long and its tip must be ground.
If knives have been resharpened (perhaps due to damage)
and consequently are too short, the distance to the cutter
bowl, i.e. the adjustment screw, can be properly adapted by
using a new insert segment.

6. Remove cutter, loosen insert segment and replace to a
segment with proper size.

7. Turn cutter against the adjusting screw. It must move the
adjusting screw easily.
2.2 Balancing
Each cutter set must be balanced after assembly. Cutter set 1,
with filler piece opposite the cutter is balanced on the big
balancing hexagon.

The cutter sets 2 - 4 will be balanced on the small balancing
hexagon (Figure 7). The remaining balancing procedure is the
same for all cutter sets.
- Place cutter set 1 (with two cutters and two filler pieces) with
the balancing disc upwards on the big balancing hexagon
(Figure 6).
- Place cutter sets 2 - 4 with the balancing disc upwards on
the small balancing hexagon (Figure 7).

- Raise complete unit by the balancing hexagon handle and
place on the balancing device (Figure 6 and Figure 7). The tip
on the lower side of the balancing hexagon must be placed
exactly in the sherical hollow of the balancing device.
- Bring the cutter sets to rest by pushing up the plastic ring (see
Figure 7).
- Push down plastic ring again.

- Balancing an imbalance with the balancing weights. First
place the weights on the balancing disc holes in such a way
that the cutter sets lie stationary and exactly horizontal on the
balancing device.
- Press balancing weights into the holes of the balancing plate.

3 Installation and removal of the cutter head
When installing and mounting the cutter head, always wear
suitable protective gloves, made from e.g. a material reinforced
with metal fibres. The cutter is assembled at the cutter-mixer.
To prevent the cutter from breaking, use only blades that have
been precisely ground (see chapter 4), adjusted (see
chapter 2.1) and balanced (see chapter 2.2). To make sure that
the cutters are mounted accurately and to prevent pitting
(corrosion), all components must be absolutely clean, dry, free
from detergents and slightly greased with K+G Wetter edible
grease.
3.1 Assembly of the cutter head

- Push balancing ring (Figure 10, Pos. 1) onto the cutter shaft.
- Push cutter set 1 (Figure 10, Pos. 2) onto the cutter shaft. The
use of the centring bolt means that only one position is
possible.
- Push an intermediate disc (Figure 10, Pos. 3) onto the cutter
shaft.
- Push cutter set 2 (Figure 10, Pos. 4) onto the cutter shaft,
angled at 60o counterclockwise. This should be the angle in
relation to the preceding cutter set.
- Push cutter set 3 (Figure 10, Pos. 5) also onto the cutter shaft,
angled at 60o counterclockwise in relation to the cutter shaft.
- Push one intermediate disc (Figure 10, Pos. 6) and the end
disc (Figure 10, Pos. 7) onto the cutter shaft (installation of a
6-piece cutter head).
- Screw cap nut (Figure 10, Pos. 8) counterclockwise onto the

cutter head and tighten using the powertool (see special
information for use: Powertool).
- Screw in safety screw (Figure 10, Pos. 9) and tighten.
- Turn cutter head once by hand.
- The knives must indicate the prescribed minimum distance to
the bowl. Otherwise, they will have to be reset.
- To assemble a 4-piece cutter head, cutter set 2 (Figure 10,
Pos. 4) must be replaced by an additional intermediate disc
and cutter set 3 must be pushed 90? to 1 onto the cutter shaft.
- To assemble an 8-piece cutter head, the first of the
intermediate discs (Figure 10, Pos. 6) must be replaced by
the cutter set 4. Push cutter set 4 onto the cutter shaft, angled
at 30o counterclockwise

3.2 Disassembling the cutter head
儃 Completely unscrew the locking screw (refer to Figure 10), turning it counterclockwise. The locking screw is permanently connected to the cap nut.
Attention! The retaining screw will be destroyed if it is not completely unscrewed from the thread of the cutter shaft before the cutter head is loosened.
? Place power tool on cap nut.
? Unscrew cap nut and discs, and remove cutter sets from the cutter shaft one by one.
? For cleaning, the sealing washer must be pulled off the cutter shaft.

4 Grinding instructions
Only trained persons may grind the cutter blades. If the grinding
work is to be carried out externally, please hand over these
grinding instructions to the grinding company.
For all grinding tasks, the cutter blades must not be overheated
at the grinding location, as otherwise it can result in material
stress and cracks. Overheating is detected by the yellow-brown
to blue colouring.
4.1 Grinding
- As far as possible, grind cutter blades of a cutter head so that
they remain balanced.
- Grind cutter blade only from the
crown side with a water-cooled
grinding stone, so that the original
grinding angle (normally 27o) is
preserved.
- Grinding with belt grinder with
approx. 3 -3.5 m grinding belt
length. First with grain size 150,
then with grain size 240.

- Grind only in lengthwise direction to prevent hairline cracks.
- Polish to a high finish using a polishing wheel or sisal cord
brush and polishing paste.
- Deburr and clean cutter blade with a grinding stone.

5 Cleaning and testing
5.1 Cleaning
The cutter blades are made of high-alloy chrome steel that is rust-resistant in hardened and polished state. However, corrosion resistance is affected by chloride compounds as they occur in every sausage. Consequently, this can cause pitting in case of inadequate cleaning, which in turn can lead to cutters breaking in high vibration areas. To prevent this and to ensure hygienic production, the cutter head must be cleaned daily as follows:
- Dismantle the cutter head as described in chapter 3.2.
- Dismantle the cutter sets.
- Remove all dirt, especially on bearing surfaces of the cutter and on the balancing discs by brushing off with a cleaning agent.
- Then clean all parts in the dishwasher or rinse thoroughly with clean water.
- Before reassembling the cutter head, dry all parts thoroughly and grease slightly with K+G Wetter edible grease.
- As cleaning agent, a mixture of drinking water and detergent is permitted in the concentration recommended by the manufacturer.
5.2 Testing
The cutters are exposed to a high flexural load during cutting operations. Therefore, after grinding, they must be tested as follows:
- Hairline crack test! For the crack test, we recommend the magnetic powder test or the dye penetration test procedure.
- Testing the remaining material cross-section by comparing with the drawing templates by presenting the wear area.
